I think for the Portuguese one we shared because neither of us were familiar with the cuisine at first. For this one, I know quite a bit about Spanish and you seem to do too, so let's not :P

But I can tell you I'm not doing a Schnitzel :mrgreen:

I'm very surprised about your decision to use beer as a sauce. Usually I would use beer (even alkoholfrei Paulaner) for enhancing meat flavours like boiling it like a broth before pan-searing the meat which reduces the trapped oil.

I really want to try the Bavarian asparagus though

I would use beer for those, it's just that I set out to simply roast the duck, but I also wanted to use beer elsewhere in the dish. It tasted great so I suppose it worked :mrgreen:

We (Germans) tend to use beer when roasting a chicken/goose/turkey/etc... Since this was a fusion dish anyways the idea of using that to create a gravy is actually pretty resourceful...
